First boil a potato with the skin. Take a fork and poke the potato after it has boiled for about 15-20 minutes (with the top on the pot). While the potato is boiling take the sausage of your choice, slit it at both ends and squeeze the meat out of the casing. Saute this with a half teaspoon of olive oil and some diced onion and green pepper (bell pepper if you call it that). The potato and sausage should be done right around the same time.
Cool the potato by rinsing under cold water or put in the freezer for about 10 minutes (gotta conserve water) Then once cooled, dice it up and add to the sausage mixture.
Combine the sausage and potato, (leave the skin on if you like) scramble a couple of eggs with about a half teaspoon of water. Add your favorite seasonings, I like Extra Spicy Mrs. Dash. Also add your favorite cheese (s) put this into a lighly greased glass baking dish and bake at 350 until the eggs reach your level of desired doneness and the cheese is melted.
Serve with some warm biscuits, or toast with Strawberry Jam, and coffee, tea or juice!
